The (severe) bump part I'll go along with but not the acceleration/deceleration.
My personal experience is using them on my '05 Triumph Sprint ST through at least five sets of tires. This bike will go 0-60 in about 3 seconds and go about 160 mph. As far as braking, it will out brake virtually any four-wheel vehicle on the road.
Bikes are very good at giving feedback through the bars, seat and pegs and I've never experienced what you describe.

But I doubt those tires take much weight to balance either. Probably less than 4 oz, which makes a huge difference compared to the range of 14 to 20 oz that my swampers took. My tires start wobbling as soon as I hit about 42 mph. After I stop accellerating, it takes about 2 seconds for the wobble to settle out. And this is in a 5000 lb vehicle that does 0-60 in about 20 seconds.
