Can someone tell me what type dana came in a '79 F-250 and are they all posi?

Most common was the Dana 44 front and a Dana 60 rear. Some have a Dana 60 in the front. They are normally all open diffs. Lockers were optional.

How hard would it be to convert an open dana 60 to a locker?

You have to set up the gear pattern or have someone do it for you. It has to be right on or it will just eat up your ring and pinon. If you want to do it on the cheep and not have to disturb your ring and pinon google LUNCHBOX LOCKERS. A lot of companys make them for the 44 or 60

I was looking at some dana 60 build number charts on the internet and it looks like from 71' on all the dana 60 are track paks. Is this correct and does this mean they all have clutches and are limited slip?

Post your axle codes and we will be able to tell you if you have a limited-slip or not.

Track Pack was a option for Chrysler's muscle cars. It was not a Dana 60 option. The type of limited slip you are talking about is a Trac-Loc. It's got clutches & It didn't get the nickname Trash Lock because it was any good.

The one I have is a 603313 which according to this list is a trac-loc.

I dont believe the one I have has any clutches, its a peg leg.
