Here is my problem. I fill up my ice trays , there are 8 of them. but when I go to get ice, all the trays are empty. I'm the only one here, there are no holes in any of the trays, but every one of them is empty. Everything else including a bag of ice is still frozen. So what is happening to my ice?

How much time passes between the filling and your going back to get the ice? Is your refrigerator a self defrosting one? The defrost cycle may cause the water to be evaporated out of the freezer box.

It does have an ice maker /water dispencer in the door, but it's not hooked up right now, so I guess it never was meant to have ice trays in it.
Agreed, but it could also be a simple leak in the seal of the freezer causing a rapid change of the solid state of the ice.
Is there any water around the bag? Can you see a place where the evaporating material is going? Where is the placement of the bag in the freezer and what type of freezer is it?
Go buy new trays. See if that works. put some dry ice and shut the door. See if the vapors leak out.
Do you have neighbors who might have an ice fetish? do you have a sleep walking ice eating disorder?

Sublimation is when a solid turns straight to a gas. So that would mean it would have to get super friggin hot super friggin quick for that to happen to water. Even if it did happen quick I don't know if you could call it sublimation cause its still turning to a liquid before it turns to a gas. Dry ice on the other hand sublimates, it has no liquid form, turns straight from a solid to a gas,

Water can sublime, too. Ever notice how ice disappears from a frozen sidewalk on a sub-freezing winter day when the sun is out?
Not saying that's what happening here. My guess is that it's the frost-free system at work.

I have ice trays on all three shelves and they are all empty. there is no water or ice for that matter in the bottom of the freezer, I figure if the water managed to leak out there would be an accumilation of water or ice in the bottom of the freezer.
I do have a bag of ice on the top shelf directly under the ice maker. That is still as I left it, I have to chip the ice out when I need it. Everything else in the freezer is still frozen including popcicles. I noticed that the ice cream wasn't frozen although the sherbert is.

not any help... but... if you have a self despencing ice machine... break the bag of ice up and toss it in the ice cube box thingy... then you wont have to break it up... just press the button and you get ice.... or just install the ice maker water despencer... its not that hard... just add a T to an existing cold water line and run it to the fridge...
I never even thought about actually useing the ice dispencer that way.
I can't hook up the ice maker to the water supply, because I am renting an apartment. I know how to do it anyway I've hooked up plenty of them, including my own when I still owned my house.
