I think it weighs just over 6000 pounds. So if I were to buy a winch to mount on a bumper, and say I'm stuck up to the hubs/frame, how much winch should I get??!!!

If I was going with a winch I'd want as much as I could afford.
I'm looking at a 9,000lb receiver mount hitch for my truck. Unfortunately it's 1,200 dollars.
When I took my truck to the scales it weighed in at just under 8000lbs. Early 99 CC longbed, dually. I would get the biggest winch I could afford. I would also invest in some heavy duty pulleys. You double your pulling strength with each 180 change in direction. You could set up a bag with a "Z" rig ready to go.
The rule of thumb for winching out of mud is min winch rating of 2x the weight of your vehicle. Mechanical (driven off a pto) or hydraulic winches are good if you expect to do much winching because they don't get hot and supposedly last longer. The downside with them is that if the engine isn't running, you can't winch.
