If you're running a stockish size tire (29"-31") and the truck's mostly going to see highway duty and you won't be towing with it you should be fine, you may not want to go any lower (numerically speaking) than 3:00 gears depending on your tire size in order to keep your rpm's over 2,000 at cruising speed.
I have 2.75 gears with a 302 and a stock 2 barrel. It really is a fast lane cruiser down the highway. The trade off is no off the line power. If you tow or carry a load, you really feel it, especially taking off on a hill. It's like taking off in 2nd gear with normal gearing.
I'm not so sure the mpg is much better with the high gears. Any acceleration needs quite a bit of throttle and you often need to punch it to kick it down a gear if you need to step out or get around someone.
would i see any difference in mpg going from 3:25 to 3:00 gears i run 255/70/15 tires?
255/70/15's should be about 29" in diameter so @70mph w/3:25's you'll turn 2,650rpm's, w/3:00's 2,450rpm's, w/2:73's 2,250rpm's (rough numbers but pretty close) will you see any mpg gains? most likely but i wouldn't expect any huge gains.
