I had a 2007 with 18 inch wheels factory and now my 2009 has the 20 inch wheels. Is it me or does the steering on the 2009 really touchy? I'm having a really hard time getting use to the steering. Does the wheels make that big of a difference? Any input will be nice.

Bigger wheels and tires should make the steering stiffer not more touchy. I went from a 2000 F350 to a 2008 F350 to a 2008 F450 and never noticed anything regarding how touchy the steering was. Just that with each change I could turn sharper.
I'm not trying to be negtive. The steering feels loose and not stiff at all. I have never had 20 inch wheels. Maybe need to get use to it. The 07 was a little stiff in the wheel. This new truck is a different animal. It takes a lot to get use to so far. So 20 inch wheels make the steering stiffer?

In that case 20" wheels again should feel tighter than 18s because they have a slightly lower profile tire on them. If it feels loose there is probably something wrong.
your 07 might have had a factory steering stabalizer and the new one might not, its a good place to start, mine is a xlt with 18 inch wheels and does not have a stabalizer

I think/thought all 08s came with a front steering stabilizer? It's not very good though.
My steering has a little play in it, not twitchy at all. I have a friend who has less miles on his truck (identical to mine except he has the 20's and I have the 18's) I find that his steering is more sensitive in terms of quick response from the truck to slight turns of the wheel.
I have 89,400 on my odo, he has 50,000. I just figure mine is broken in and his is still new. Could be both miles and the lower profile tire on the 20".
Anyway, if your truck is new, the steering is very quick to respond, enjoy it. In a few miles it will probably settle down. Do check that nothing is wrong though!
Your '09 is probably a little heavier and sprung differently so the quick response you feel from the wheel might be stiffer front end too.
I forgot to mention that tire pressures make a difference too. They may be maxed out at 80psi which is not necessary unless you are towing heavy, in my opinion.
