The way I would hook it up is to use a Y cable to split the one RCA into the two channels. I think this doesn't effect the voltage, so the gains should be pretty normal. It does halve the amperage, but that doesn't really effect the output of the amp significantly.

Actually, it's a factory Audiophile unit that I'm installing. The 2007's didn't get an Audiophile option for some stoopit reason. It has no RCA outs, and only 1 sub channel. I'm running cables for the aftermarket sub.

I'm REALLY wanting to avoid that, if for no other reason than my luck with building RCA's is spotty, at best. One can turn up the gain on the amp, but I'm afraid that I'll have to top out the gain control to compensate for the halved amperage on a pre-amp level signal.
I have a mono Kenwood amp that I picked up at a flea market, model KAC-819. 230 watts RMS into 2 ohms, 150 RMS into 4 ohms.
Googling turns up a bunch for sale various places, but there's gotta be similar amps available new.
Many companies still make mono bass amps. Generally, they have one set of RCA inputs & one set of speaker leads out. You can run them at 4 or 2 ohms, giving you a wide array of subwoofer options....one 2 ohm sub, one sub w/dual 4 ohm voicecoils, two (4) ohm subs, etc.
I run an 800 watt Alpine on a dual voice coil 12" (2 ohm load) & it does way more than I need. I should have got the smaller amp.
