Many questions
-How do you take off the panel inbetween the hood and windshield to take out the windshield wiper? The motor does not seem to work at all.
-The truck has problems idling and will rev up to about 2000 RPM's then at other times it will just cut off. When I hit the gas pedal it seems to almost die, but then gets power back. How can I fix this problem?
-I was looking at getting the most power out of the engine and making it sound good. My dad sugested putting on headers, taking off the cat, and adding true dualls. Will I get any problems from doing this? Should I look into long headers or short headers?
-The truck has a 351 fuel injected motor.

The idling problem is probably related to a vacuum leak, check that the juice can on the passenger inner fender isn't rusted out and also look for broken or cracked vacuum lines. You could also have a leaking brake booster, pull the big line off and plug it while the engine idles to see if it makes any difference.
Exhaust changes are fine and will deliver more power as long as you put the O2 sensor back in the exhaust system somewhere near it's original location. You will probably want to eliminate the air injection system when you do this as there are numerous connections to the exhaust that you won't want to replicate, and eliminating it won't affect engine operation. However the EGR tube has to stay connected and functional or it will throw codes, that's the tube at the front of the passenger exhaust manifold.
