my 87 ford f250 with a 351 windser the idle goes up to 1000 and then down to 600 like its missing do you think it could be as simpl as plug wires

Plug wires, plugs, Cap, Rotor... Maybe the IAC if you have not cleaned it as of late (worked great on mine).

my 302 does the same thing, mine has extra fuel in it when it starts up so the rpms are high but then it dies down

Unplug your IAC sensor and the truck should die out. If it doesn't, your IAC is bad, replace it.
