I have massive shudder when engaging the clutch from a stop. Suspected weak pressure plate and replaced the clutch/press.plate/throwout brg. with a matched set from Zoom/Perfection. New parts didn't fix the shake, may even be worse.
Along with the pilot bearing question, did you have the flywheel re-surfaced? If not then I would imagine that this is the cause of the shudder. Do you recall seeing blue heat streaks on the flywheel surface? This is the usual cause of clutch shudder engagement. When I replaced my clutch awhile back I was amazed at the amount of heat damage on the flywheel. Blue streaks everywhere and over a "zillon" cracks.
When doing a "clutch job" it is always best to replace/re-surface the flywheel and pilot bearing along with all of the other parts you mentioned replacing. Sorry, this is not good news as you have to drop the tranny again. I know, as my first clutch job had results exactly as yours.
Looks like its back under the truck - I turn and replace brake rotors with regularity, don't know why I didn't do the flywheel. I'll get the bearing while I'm there this time too.
If this is a new engine/bellhousing combination, you might want to check the bellhousing bore with a dial indicator to see if it is concentric to the crank. I had this problem once, almost drove me crazy. :-X12
If the clutch linkage is mechanical (probably not - I think that stopped in '83), then it could be the body mounts. Mine were shot and the whole body was lifting off the frame when I'd press the clutch pedal - the whole truck would bounce when I'd let out slowly.
