I recently tore down my engine after a blown head gasket. I put it back together and had low oil pressure so I put in a new oil pump. Oil pressure was great for 4 days. Tonight driving home it went down to nearly 0 and every once in a while it would creep up barely into the normal range and then down to 0. Sensor wire is connected and oil level looks good. It is a 351w roller from 94-97 in a 85 F150.
You should start by temporarily connecting a mechanical gauge to verify oil pressure loss before pouring in lots of money and effort.
In the course of replacing the head gaskets did you pull the distributor? The intake can be taken off and replaced without pulling the distributor, but most people get it out of the way.
If you DID pull the distributor, you might have pulled the oil pump shaft up and out such that it did not get back in place upon reinstallation of the distributor.
My 64 Galaxie is a stock appearing car as long as the hood is shut. Since in those days they only had idiot lights for oil pressure and generator, I put a mechanical oil pressure gauge and a Volt gauge under the hood.
They are very handy for making sure that everything is working correctly and the idiot lights are still operational so that I have an in the drivers seat warning while driving.
You can get an adequate oil pressure gauge that doesn't look all that great for less than $20. Mount it under the hood and you will then have a quick way to verify oil pressure when necessary.
