I am about to replace the calipers on a 93 F250 and was curios which was better, steel pistons or phenolic pistons?

That is a good question. You will probably get a lot of different opinions but with steel being ahead.
Phenolic virtually guarantees that the piston will never seize in the bore due to water etc. getting past the rubber seals. The down side is that over time the piston can distort when it gets hot and stick in the bore causing the brake to drag, sometimes to the point that the vehicle becomes undrivable until it cools. However this may not happen for many years.
Steel, on the other hand, does not distort and therefore will last indefinately. However if water and dirt get past the rubber seals you can end up with the pistons seizing in the bores.
The choice is yours.
Thanks for the reply Lazy K, I have been having trouble with the calipers not fully releasing. I have cleaned and greased the slides, but a couple miles later it's right back to hanging on. This is probably a stupid question, can you grease the steel pistons to help with retracting or is that asking for trouble?
Another good question. You definately can`t use ordinary grease, it would eat the seals. However I have had good results with WD40,
Extend the piston out a bit, lift the dust seal up a bit with a small screwdriver or similar and spray under the boot liberally with WD40. Then push piston fully in and refit pads.
Worth a try and it won`t hurt anything.
