Im looking at getting a 04 ex with 105,980 miles on it. 6.0l diesel. I currently have a 93 f-350 with the idi 7.3 and get around 16mpg towing my 6-7k trailer
im wondering if i will see the same mpg out of these new diesels? i have read about 20 pages on here, but everyone seems to have diff mpg.
im looking for an avg city empty highway empty
and then loaded city and hwy.
The 6.0 is very fuel efficient engine with lots of power and an awesome 5-speed auto behind it. Your 7K trailer won't be much for that engine as it can handle almost twice that. I'll move this down to the 6.0 section so you can get some real-world testimonials.

with my mods listed below here is what I've seen:

overall hwy I consistantly see 18mpg @ 80 mph, drop the speed and the mpgs go way up
65 mph 20+ mpg........the lie-o-meter says 25-26 mpg when i'm @55mph
around town its been from 12-14 depending on how fast I drive and how much the truck has been idling.
I would say you'll get at least 14mpg. Its kind of hard to tell. If I even turn on tow/haul I drop down to about 10-12. You should be able to get by without using it with that small of a trailer, you'll need to monitor your temps though.
I sadly would also recommend you try to find a 7.3
