Depending upon your mechanical skills, it might be easy enough, or very difficult. About 25 years ago I installed a mildly cammed chevy 454 with a th400 in a 74 F250 pickup which I had converted to a tow truck. I had headers, custom bent duals, power steering and a/c also. All the gauges worked(easy, just use the oem ford sending units), and for the a/c I used the ford compressor with brackets I fabricated. As for motor mounts, I used late 60s chevy truck mounts which bolted right in. For the crossmember I just had to redrill the trans mount holes. Driveshaft was fabbed using a chevy shaft with a ford end on the back. I used the ford radiator and shroud. Hardest part was finding a power steering pressure hose to work, But about 1/2 hour of scanning a catalog in a parts store, I found what would work.
The only difference now is the vehicle is computer controlled. If you were to break it away from the computer, and sort through the wiring, it would work.
stand a lone efi was what i was thinking. didn't think about the gauges. i was thinking about a 5 speed from a 96 5.8 truck. not really planning on gutting the truck just having the power there if i wanted it. not to mention i like a challenge. look at the f250 in my galley and you will see what i mean.
