There is some difference. Workshop/dealer assembly car different way then plant. Just an example about semis, usually wiring harness is put to frame railes before frame is done, and only when wiring harness and air hoses are in railes they install riviets.
On plalt tranny is bolted on engine before installationg on truck, then engine is installed on x-member, and x-member with engine, tranny and suspention is installed on truck from underneath...
The factory shop manual is written and prepared for servicing of one model or line of vehicles. It is more detailed than a Haynes or Chiltons or the paperback books you can get at parts stores. They will say things in very general, such a "remove engine", while the factory manual could list out such things as disconnect ground strap at rear of left cylinder head, remove push pins holding upper manifold cover to throttle linkage.
The major difference is the level of detail. Lots have illustrations of 'blown up' components so you can see ahead of time what you should expect to find when you go exploring...
