No first hand experience with this. That's just how I envision it.

My supposition was based on an incorrect vision created by an unfed mind... Now that I went to Subway and got a sandwich I understand the alternative theory and agree.
It's the engineer in me (although my specialty is water resources).
However, just cuz it sounds good doesn't mean its right. Odds are there's something going on in there that I don't grasp and which makes my theory WRONG. So don't take it as gospel.
Remember, I'm new to Ford diesels as of 7 months ago. I like to share what I'm thinking. I learn more that way. Sometimes it sounds good but its wrong. Part of my learning process.
The lower EGT's is completely understandable and provable if you have a gauge and before and after standards(that I do not have so I rely on you guys that do). The cat works by getting extremely hot and burning gasses. You get rid of that heat and the pressure it causes when you remove or gut the cat.
I don't know how you would measure spool up time other than seat of the pants feel which is not factual or measurable, just opinion.
Logically, it would seem that if there is less pressure/resistance after the turbo, it would be able to spool up faster from the upstream pressure.
Maybe even produce more boost since all it has to fight is the air it is pumping?
