320 vs 351?

Which would be better overall in a 92 supercab shortbed? I am looking at two different trucks and the difference is the motor 5.0 and 5.8. What are the pros and cons of each. Not towing anything but maybe once a year if that from uhaul etc. Daily Driver truck. Looking more for a strong reliable motor that has some get up and go and not a slug

I don't know... mainly since you aren't going to be towing, I don't see why not go with whichever truck you like the most. Drive them, see what feels best. Both are reliable engines. Gearing and transmissions matter, too.

Both motors are very reliable, but if you have driven any of the current trucks you'll be dissapointed by the performance of these motors in stock trim, they were only rated for about 200hp, and even that seems generous for some trucks. The 5.8 is a FAR better truck motor, it produces much more TQ below 3000rpm where you'll spend most of your time. The 5.0 isn't a terrible motor but it needs more gearing to not feel overwhelmed, so you want 3.73 gears minimum with the 5.0 IMO. The 5.0 will deliver better city milage on average though, that's just physics.
