Last night my truck started smoking, bad. I checked my ccv hose and found a kink. Today I fixed the kinked hose, and checked the oil, it was low on the dipstick. I changed the oil and went for a test drive, and now No smoke. Could the kinked ccv hose have caused the smoke. Either way I hope it's fixed.

I've never heard of that one but I guess if the hose was kinked and it smoked and you took care of that and now it doesn't....well, that must had something to do with it. I do know that a kinked or blocked can cause oil leaks due to increased crankcase pressure. You might want to take a look for oil leaks.
The smoke was blue. I drove about 30 miles this evening with no smoke, even at wot. I did notice that oil had been leaking on the side of the oil pan. Could the oil being low caused the truck to smoke? Sorry for being so ignorant, but this truck is my pride and joy.

Blue smoke is usually a sign you're burning oil. The oil being low shouldn't cause the smoke unless it was leaking into the cylinder. The kink caused increased pressure in your crank case, which usually results in an oil leak.
If removing the kink cured your smoke problem I'd just keep an eye on things and make sure you don't have any oil leaks. Also, next time you see smoke I'd avoid WOT until you figure out what's going on.
