Truck not overheating or heating up?

Well My father and I put him together a truck from parts. He didn't want to spend much so we re-used everything we could even a used water pump (that was removed from a overhauled motor that sat for several years) and thermostat. He tested the T-stat in hot water with a ray-tech gun and it opened at around the 190's.

The problem were having is the temp gauge does not come up. we have tested the gauge by grounding it worked fine installed several sensors even a brand new one. $43.00 wow did he squeak. the temp at the top hose is around 200 and the same with the coolant with the cap off. But the lower hose is cold but yet today it's 90 out and the truck does not over heat. I hear the fan all the time when I free rev the motor. Can the fan clutch be bad cooling the ingoing water to the motor down that much that it wouldn't heat up the motor?

These engines with a clean cooling system are hard to get any temp in at idle, takes a good load or highway run to get up to temp normally. If you are seeing 200 at the top hose, you are alright. Mine only ever gets up to the N in normal at the hotest I've ever seen it. Stock guages are not know to be accurate, but they should be consistent at whatever yours reads at.

It reads nothing it don't move at all. I started mine today just after I made the first posting drove it about 4 miles and it was up to it's normal spot very low on the left side of normal. I got home and unhooked the same wire that I thought was to the gauge on mine it did nothing my gauge stayed working. but the same wire on my fathers seem to run the gauge. (left front head temp sensor) if I unhook the one right by it in the block my gauge stops working. He is on his way over now I will get to the bottom of this tonight I hope.

I forgot to say my fathers is a 90 and mine is a 94 but I don't think this should matter.

I never got to it last night but the time I worked on it before if I grounded the temp light switch it would make the gauge go up. hum maybe I have it wired wrong I will have to check that today.
