Anyone ever had the thermostat stick "open" on an IDI.

Ensure you use the right one if you are replacing the TSTAT

CAUTION:
The specified/required thermostat does not contain an internal bypass, since the bypass is located in the cylinder block. Whenever the thermostat is replaced, it is mandatory that only Motorcraft E5TZ-8575-C or Navistar 1807974C94 thermostat be installed.

Will it hurt to run it on the cool side for a while till I can get the stat changed? It will just get into the normal range after 10-15 mins. of driving.

Not really. 195F is the ideal temperature for fuel economy, engine wear and oil performance. But it won't kill it to run another few days on the cool side. Your MPGs will likely be affected, so that is reason enough to change it as soon as you can.
