I've been searching trying to figure this out for a little bit too. From what I've found, you only use the valley pan. The one I got came with metal intake manifold gaskets attached to the valley pan. That's all that you have to use for the intake to head seal. I found a detailed description of doing just this in the book I have on rebuilding Ford engines. The end seals go on the chinawalls first (either the seals themselves or RTV), then the valley pan gets dropped on to the motor (with a light coating of sealer around the water passages), then the intake gets dropped on the valley pan. All of this is assuming that you're keeping the exhaust crossover. Good luck.
From what I know, the valley pan is to keep hot oil from splashing on the bottom of the intake, and keeps temps. down. I reused mine, cut off the metal gasket parts, trimmed it for a nice fit, siliconed the china walls, and used fel-pro gaskets. Mind you, Im running propane so I have the ex. crossover blocked trying to keep the intake as cool as possible. I believe the pan helps keep the oil clean, preventing it from being cooked onto the bottom of the intake, then knocking the chunks back down into the oil.
