Welcome to FTE. Yes you can do it, but it's not as easy as it sounds. The wires and plug are already behind your dashboard where the switch goes. They're just not plugged into anything.
The tricky part is you will need to have your PCM (computer) re-flashed to accept the switch without throwing fault codes and dealers won't do that for you.
This of course doesn't even factor in the laws that require the child seat to be in the back. Sorry, but the best thing to do is put the kid in the back.

your truck's front passenger seat is not designed for child carying aparatus since the childs' chair would have to face backwards.
put the ruggie in the back where approved. It may not be convienient to you but is safe for the child.
I agree with keeping the kid in the back. But to answer your question, order a new pcm from someone like DP Tuner and have it setup for an extended cab. Install the switch, and you should be good to go.
I have an 03 F350 crew cab with 6.0 and would like to do this mod. Can I go to the junk yard to get the air bag switch off any ford truck? I have 4 kid's so there is 6 of us total and no choice but to put my oldest up front I would like to re-arange the seating and have car seats on the lap belts. Since I have two in booster seats and two in car seats this would be the safest configuration. Has any on tried aftermarket products?

Talk to your dealer about your situation and they can probably help you on installing a cutoff switch. If there is a legitimate reason why you need to put a child in the front seat they can reprogram your computer for the switch.
