In preparation for resotation, I'd like to know if it's possible to "unbolt" the entire dash? Mine has some minor surface rust on the backside I want to take care of, and I think it would be much easier to re-work the dash wiring from the back as well.

I see no bolts or bolt holes in the parts catalog illustration, and in the text section under C5TZ-8104320-A (the dashes part number), it doesn't list any hardware.

It's spot welded in. If you look along the cab dash panel mating area you can see tabs with the dimples on them. I'd drill the spot welds after I presicely marked the location of each tab and then pull it out. Just paint the under side of the dash panel and leave the tabs bare. Then fill in the tab holes with a welder, clean it up and spray the interior. Just me though.
Fully spot welded... sorry...and a pita to remove. Usually a 3 blader on the sawzall...
I typically get up in there with some scotch brite and spray some rustoleum WHITE paint on the inside... It is a treat to see up in there when its bright.....Amazing the difference.
When i would scrap a truck i would cut out and save the dash for repair panels for huge radio holes and such.
