Temp gauge reading Cold

I put a new thermostat(195F), water pump, and replaced all the heater hoses. My question is my temp gauge is always reading Cold. When i replaced the thermostat housing I didn't install the vacuum switches because the part store didn't have any in stock, original ones were cracked. So i used the plugs that came with it to plug the holes on the housing. Could this be the problem and does anybody have a chart or diagram to where these vacuum lines hook up to? any help would be appreciated.
By the way, it's a 400 outta a 79 F250.

Temp gauge reading Cold

I assume you are using your factory temp gauge. To check your gauge itself, pull the single wire from the temp sending unit and ground it, using a makeshift wire, (I use a 2' piece of wire with aligator clips on each end, bend a paper clip or something similar, where it will fit in the wire end. Fasten one end of the wire to the paper clip then ground the other end to a good ground) then turn your ignition key to the on position, the gauge should peg. If it pegs, your temp sending unit is bad. If it does not peg its in the gauge or wiring.

Temp gauge reading Cold

Your temperature sending unit may have failed or if someone put in a
new one I hope they didn't use teflon tape. If you use tape on sending
units the unit won't ground to send the signal. Good luck. Andy.
