If you would of asked me this about 6 months ago i would have said i like mine well done.
just a little while back my buddy introduced me to the greatest tasting steak I ever had. He got the charcoal real hot, blew the ashes off them with compressed air, and then tossed the steaks straight on top of the red embers. He let them sizzle about 30 seconds on each side.
It was a little crispy on the outside, and juicy in the middle. Just like Frank said, black and blue. I didn't even need to soak it in steak sauce, they were perfect just plain.
I like my steaks Medium. Used to like them well done, but discovered that the more well done, the tougher the steak to chew. Even a good Tenderloin can be ruined by cooking it way too long.
Medium is a difficult state to actually attain absolute perfection. So, actually, med to med well is acceptable.
When I first read the title to the thread, it reminded me of a story. Was going to come in and start it out like my buddy always used to do at restaurants.
Only.. he'd usually respond to how do you like your eggs?
"Oh, I like them very much, thanks for asking."
"No, no... how do you like them cooked??"
"OHHH.... I like 'em even better that way!"
"Which way?"
"Cooked!"
"No! How do you like your eggs COOKED?"
"Well, I usually prefer the cook use a frying pan with lots of butter."
Usually, by then the waitress is ready to club both of us and we decide to get serious. But she usually gets pretty flusterpated in the mean time.
Guess, it's one of those,"Ya had to be there" kinda things.
Medium-rare for most cuts, venison steaks should be grilled rare since it's so lean. Venison and tri-tip are my favorite. I don't eat filet mignon too often but it's got to be to at least medium cuz it's so darn fatty.
Get that grill HOT so they're done properly. Don't need any sauce when it's done right, as Jimbo stated. Gonna have to try the embers method, interesting!
I like mine rare to medium rare. I want that thing still bleeding when it's on my plate. Cooked just enough to get the death germs out of it. MMMM. I'm getting hungry now.

I like my med rare to med. It seems like nobody around here can cook one like that though. It is almost all the time close to well done. I ain't picky though. I can still eat it.
