They all vary somewhat. Two identical trucks can vary several miles per gallon. The 7.3L was known to get better mileage than the 6.0L. The 2003 model year offered both engines, but you didn't state which engine is in the truck you are considering.
This topic has been discussed many many times. Find out which engine is in the truck, then do a search for MPG in the forum for that engine and in the Superduty and Heavy Duty forum. You'll find PLENTY of information on the subject.
