Here the wind can blow a hood up, and I have a heck of time trying to open my hood regularly????? That must one heck of wind to break that safety latch! Now you have me concerned about my hood coming up, and I just repainted it...
Fergusonic- I know your not telling me to buy a tilt hood... Controversy is always good. It generates ideas!

So far I have not had any issues with the safety latch. That is even after driving it 50 miles one day with only the safety latch holding it closed. Dad didn't shut the hood! GRRRR!
Mine is stock, as far as I know, and does not open very far either.
This is as far as it goes:
Any farther and it would hit the windshield. Look how close it is now.
Mine opens and shuts fine. It stays up on its own. I do not need some sort of prop rod (stick, broomstick, or whatever).
It does need some final adjusting before I blow it apart for paint, but I am not to that point yet.

My 88 F-100 (may it rest in peace since my son totaled it two years ago) had it's hood fly open. We suspect the main latch wasn't secured (hood wasn't closed all the way after my wife jump started my in-laws.... yeah take your pick, blame it on the wife or the in-laws...) anywho I could never figure out why the secondary safety catch didn't prevent it from flying up.

The F Series trucks that have most of the flying hood issues are 1967/69's.
I learned a few things selling Ford parts for 35 years.
Owning 325 cars/trucks since 1956, has taught me a few things, too.

I've had the hood fly up on two different 67-72 trucks. In fact if you look around there are tons of them on the road with the tell-tale dent in the top of the cab and a matching dent at the top front of the hood.
One time I was flying down the middle lane of the interstate at approx 60mph when my hood came flying up. I finally got my window open so I could stick my head out and see and got the truck over to the side of the road.
I never did get that pucker mark out of the seat!

Both times the wind caught the hood, and the safety catch was RIPPED from its location, and the hood flew up and back.
In 35 years, I sold 100's of new hood hinges, hood latches and hood lock supports, and prolly 100+ hoods...and it was usually because the hood flew up.
It's a well known Ford trait.
Look in the members galley...you see trucks where the rear of the hood is slightly higher than the cowl.
The cause? At one time, the hood flew up...and that stretches and tweaks the hinges.

I was only talking about trucks up to 60, not the later ones. 57-60s are just like the 53-56s, and have a healthy hook and a strong latch plate, and a rather heavy hood. The later ones (after 1960) have an entirely different windshield, hood, hood hinges, and latch. The hoods on the 53-60 do not open too far because the hood easily hits the windshield, particularly on the 56-60s. As windy as it is here, I like the idea of a prop rod to hold the hood open and also to keep it from being blown higher. Having had two 56's, a 60, and a 53, and never having had a hood fly up even when I did not make sure the hood was latched, I have faith in the safety latch. I'm sure many of your parts customers have had hoods fly up, but I do not think it happens to those of us that build nice trucks, because we make sure the hood is adjusted...... I am old and somewhat grumpy too......

I forgot to say earlier that I intend to leave mine with the stock opening hood. By being stock....I am different from the vast majority at shows now.
Another member here who converted his to the front flip sent me his barely used hinges (free) and even paid the shipping himself. Thanks buddy!
So...I have a spare set if mine ever give me trouble.
