Neal I am not really sure what the benefit would be either. Oil will break down at high temps and I guess with out injection system the oil plays a very important role more so than the standard diesel engine. I see no real need for a oil temp sensor though I would like to know what it is as well as coolant temps. I know some guys have oil temp and have stated some temps and higher temps when under load.
The turbo could also play into it as for shut downs and what not but I don't know any solid temps to look for.
There or T in with the stock temp sensor on the back of the HPOP reservior. Either will give you good readings. At the oil filter will be easier access and will be post oil cooler to give you the temp of the oil before it goes into the engine.
It is a very important gauge when diagnosing a problem. Our 04 6.0 was defueling when pulling heavy grades with a trailer, and it ended up needing a new oil cooler and egr cooler because the engine oil was getting so hot but the water temp was normal it was hard to figure out (oil temp was 280-290, water temp was ~200). I dont know if our 7.3 will defuel when the oil temps are hot but its something to consider.
I installed both a water and motor oil temp gauge. I have yet had an opportunity to pull my trailer but just cruising the freeways and driving around town I have noticed that my oil temp is approx 10-20* higher than water temp. unfortunatly I don't recall the numbers but they were low around 180* I think.
