Not sure about something (even though it's post facto) and would like to get some information. My truck was originally copper poly over some kind of tan, I'm just doing a repaint and went with copper poly over white:

Did Ford sell them with copper poly and white or was it the tan only?

No such thing as "Poly" (polyurethane) paint on any Ford truck.
Ford paints from day one: 1903/1912: Colored Varnish / 1913/1924: Black Varnish / 1925/1959: Duco Enamel / 1960/1980's: Acrylic Enamel / 1980's/ Two Stage Water Based Base Coat/Clear Coat.

Note: Look above the line for the paint code, not below.
Any solid color could be combined with Wimbledon White.
Possible Ford colors/codes on your 1978 Ford that match the pictures:
2 = Medium Copper / F or H = Dark Brown Metallic / P = Dark Nectarine Metallic.
