Well I have the 351 in my truck and I like it a lot. I had the 302 in my 94 and didn't like it AS much. I've never driven the 300 but I've heard NOTHING but good things about it. I have to vote for the 300.
Test drove a couple 302's, found them severely lacking in power when compared to the 300 and 351. I've owned several 300's and one 351 so far, and the 300 really is the best light duty truck motor made.

I have a 351 now, very nice motor, I just don't think it has the endurance like a 300 has , I had one in my 78 truck , couldn't kill that thing for nothing , tried but failed. Had a built 351 waiting to go in her, cuz the 300 was leaking oil from everywhere , drove it on 2 qts of oil to do her in, she got the last laugh. I yanked the motor a couple days later. My vote for best motor 300.

Well there's also no option for the 460 so don't fret.
Personally, I think the 302 has one of the best bore/stroke combinations ever made. It may not be the best _truck_ motor but I don't pull much and my trucks the lightest you can get and she screams plenty for me. Then again, mine isn't bone stock either.
No question the 300 is a good motor, but I like my 351. I think it's a much more versatile motor than the 300. It has better torque than the 300, can be built for more torque or more HP, and has good endurance as well. The 302 is in the next class down from the 300 and (IMO) doesn't belong in a truck.
351 i hear all good things and ima bigger is better kinda person, wouldv gave the vote to the 460 i love mine but to be honest the 300 the 351 and the 460 are indestructable only reason i really gave 351 is because its little easier to find parts for and build.
I voted 351W of the 3 listed..
the 300 would be my second choice
and I think the 302 is a slug..
personally, I would include the FE, Cleveland & Lima motors and order it this way...
390
429 (not used much in the trucks, I know, but a better power/cubes ratio than the 460)
351W
300
351C (extremely compatible engine for muddin'... get one RPM'ed up & breathing and you've GOT to be kidding)
460 (makes a nice boat engine, too)
