What is the recommended degree thermostat for the 300 ('87 F250)? I've been running a 180 degree, but since putting in a larger radiator, the temp. hand on the gauge is barely getting to the lowest normal mark and that's in hot weather. I'm wondering if I ought to change.

your '87, irregardless of which radiator and which model it's in is rated for a 195deg. thermostat. Putting a higher temp rated thermostat without replacing ALL hoses will cause increased pressures due to higher surge temps and quite possibly ruptured cooling system.
Also EFI engines require a hotter base temp. A 190deg is the coolest you should run as the computer is calibrated for between 175-185 to switch between cold and hot operation modes.
Sounds like your thermostat is opening up too early and the engine isn't getting warm enough. Go with a 193-195 deg thermostat. Also make sure your hoses are less than 4 years old. Age and heat cracking and flow degradation internally can make them go KA-BLOOEEE at the most inoportune times.
