I wish I knew of an inexpensive source of freeze-dried veggies and things. It would be nice to have some containers of peas, diced carrots, and stuff to put in ramen noodles for quick snacks made in a microwave. If your grocery store has a display of Mexican spices in plastic packages (chiles, dried garlic, mexican oregano, etc...) look closer and you'll find dried schrimp available too!
As it is, dried chives, garlic, onions, and small cans of muchrooms or olives can be useful! I also was pleased once I tried adding egg to ramen dishes. Hard boiled eggs, ground or mashed in a bowl in the fridge can be sprinkled in salads - even if not used in noodles.
One thing I'm always on the lookout for though is single serving sized cans of just about anything. A tiny can of diced tomatos, added to plain old canned chili changes it completely

I tried growing habanero's a couple years ago. Came on late but got a bush load. Dried them in a dehydrator and ground them up. I put a caution label on the jar cuz them babies is smokin!

I do that every now and then. I make the Ramen like the package says except I go a little shy on the water and when it comes time to add the flavor packet I have two eggs cracked into a bowl and whipped up and pour them in and add quite a bit of crushed red pepper (me likes the spicy) and stir like hell. The eggs kinda bind everything up and there is little broth. It is just spicy chicken noodle with egg, and it's a must try.
Boonie peppers from Guam. Grew wild all over the place. Hot hot hot. I think I still have some dried ones at the house. Threw some in some ramen one day thinking they were normal crushed reds. They weren't normal crushed reds...
I'll have to try the egg in the ramen noodles idea. I've been looking for ways to make those ramen noodles a little more interesting.
Anyway my "midnight" snacks usually come between 10-midnight (I go to bed around 12:30) and it's usually crap I shouldn't be eating that late. Cheese, cashews, chips, maybe a small sammich...depends on what I have laying around that I feel like munching on.
More than once I've made myself a plate of nachos with jalapenos on them at 10 or 11 PM and regretted it for most of the night. doh.
Man, I need to stop reading this thread. It's making me hungry and ain't even lunch time yet. Might have to hit one of them all you can graze places today...
