600cfm is more than your usual 300 will ever really need since it's probably not going to be revving above 4500-5000.
Are you considering a single or dual plane manifold?
I've got an Offy single plane and an Edelbrock 500cfm and I'm battling a lean bog at WOT. Do yourself a favor and splurge on a wide-band O2 sensor when you're ready to tune. I haven't fiddled with Holley carbs much, but I'd wager you can tune a 600 to work with your proposed set-up.
470 cfm truck avenger would probably be a good size and can be had on holleyperformance eBay auction at a decent price as long as you don't get in a bidding war. Otherwise they are a bit spendy.
I just bought an 0-1848-1/4160 465 cfm for less than $180 including shippng. I'll convert it to an electric choke and quick change vac secondary spring and start the tinkering.
Bummer BVA. IIRC Edelbrock has a carb tuning manual and maybe even a DVD or you might try this http://www.themotorbookstore.com/9781932494365.html. Or give the Edelbrock Techs a call and see what they suggest.
With my present carb (see signature) my foot has to be in control of when to go WOT...too slow a speed and I get a hesitation at the transition but with a little less aggressive movement on the throttle the transition is fine...even smooth with good acceleration.
No worries, I just don't have time to fiddle with it during the week. I'm going to advance the timing a couple of degrees, I think the vacuum drop at WOT is retarding everything too much, plus I'm not getting any knock even though things are really lean at cruise/part throttle. I just picked up a couple (more) sets of metering rods and accelerator pump nozzle kit from the speed shop today. It's just a matter of trial and error. It may take a month but I'll lick it.
