Carburetors of that era were either a controlled fuel leak, or a metered fuel leak... I can't remember how to tell the difference...

well i want to swap out me efi 302 for a 351 h/o but it would be easier to carb it woulen it??im going to pack it with as much preformance as i can afford. and i dont know if a stock efi system will cut it..

given the multitude of speed parts available for EFI engines, I'd do it that way...
big bore throttle body, performance injectors, intakes, cams tailored specifically for EFI, headers with O2 ports, chips, etc.
is it possible to put a carbureted engine in a truck that has efi??
You will need a distributor with advance weights, springs, and a vacuum advance to control your timing.

Well.. spill the beans... just how much performance can you afford? FYI.. the stock truck EFI system can handle heads, a cam, and a complete exhaust system.
If you're worried about the intake get the ports wallered out a little and gasket matches get the heads done and a good cam and you'll have some decent sized acorns.
