Not too easy. I don't know if any frame mods would be needed but you will have to either get a new bellhousing for your tranny which probably doesn't exist or you would have to replace the tranny and the driveshaft length would have to be changed. Not sure if the 8.8 differential is up to the job either.
Does anyone know how easy it would be to do a 390 swap into a 78 f-150 4x4 that had a 300 I-6, and does anyone have a guess on how much that would cost

It's really an issue of how much work you want to do yourself. I paid $95 for a bell housing for one setup and I could have found it myself and paid 1/3 that.
In other words if you are willing to go out and take some measurements then run thru some pull-it-yourself type yards then you should be able to get by cheap.
I'd look at motor perches, tranny adapter for manual, FE C6 if auto, then have a drive line made (locally they get about $200 for that) The 78 should be straight forward except the motor perches, you'd have to measure what you have and measure the FE, but you could also have a welding shop to that for pretty cheap.
Swapping a FE into a 78 is pretty easy. Just find a 73-76 equipped with a FE (or that used to have a FE) to use as a donor. Either buy one for parts and strip it at your leisure, or (if you're like me and don't have space to park a parts truck) find one at a local salvage yard and make a package deal with the owner for all the parts you need off it (he'll generally exclude some valuvable items like glass, steering column, etc.).
