390 or 428 ?
One thing I would do is make sure it is an FE. Since FE's weren't offered in light trucks after 76 and I don't think 429s were ever offered in pickups something ain't factory here. With the info offered so far I assume the engine was swapped in and could be a 428 but first I would look at the intake manifold. Check out your 390. The intake manifold extends underneath the valve covers. FEs are the only Ford engine I know of that do this. About an inch in from the carb side of the valve cover you will see the vertical mating line of the intake to the head. If this is the case then go ahead and check the stroke with the afore mentioned method.
