How many people are towing with their lifted Excursions? I'm not talking about just some little trailer, I'm talking at least 5000 lbs. Are you using a weight distribution hitch?
I know that the stock suspension has been known to wander as it goes down the road, and changing out the rear springs helps with this. My brain tells me that if I raise the center of gravity it is going to tow worse than before, however, maybe the 'lift' springs are stiffer than the stock ones and it isn't an issue.
I have a drop shank with my current WD hitch that is pretty low, but I don't know if it would accomidate a lifted Excursion. My Jeep GC's receiver is pretty high, and my current car trailer is low.
My first concern is the drivability, second is if my WD hitch will work due to the height. I will be purchasing a 2WD model, so I will gain a couple inches that way.
There is a memeber I know of Aatcntrl1 that tows with a lifted Ex as there are many others as well...you may want to PM him to see if he has any insights for you...
When you look at lifted Ex's...take a gander at the load range on the tires...make sure they are E's if possible...the E's can be aired up to 80psi and makes for a more stable tow experience. Some larger diameter D's though carry just as much load (i.e. #'s per tire) as a 265/75R/15 E stock tire though...side wall flex is what you want to AVOID.
Reese and the other WD hitch mfgs make all kinds of drop shanks...you may want to call your WD hitch mfg first though to make sure their WD system works with lifted trucks...or better yet ask them if there is any lift limitation with their hitch head and spring bars...just a thought...
I tow 13,000 lb with my X but it is not lifted. Why dont you want 4X4. We hardly use it but there have been 3 times that if we didnt have it we would have been up a creek with out a paddle. Just tossing the idea around,

My Ex is not lifted, but it has LT275/65R20 tires. It pulls my 7500 lb. camper with no problems whatsoever. My WD hitch has a height adjustment. When I purchased the truck, I simply adjusted the hitch and have had no problems.

sturzinator - what kind of WD hitch are you using? I have a pretty low shank drop on my Jeep GC right now (~6"), but I have seen some 8" drops for sale online.
weekendwarriorfsw32 - At one point I was thinking of a 4x4, however, this will be my race car hauler, and we don't race in the winter. So the couple times that I might want it don't out weight the maintenance or additional purchase price.
