You'll need the interior temp sensor and the exterior temp sensor. You may already have the latter. Not sure if it is plug-n-play but I would guess it would be.

No, I don't think so. I believe that the dial HVAC system is vacuum operated. It uses engine vacuum to actuate the blend doors and the temp controls. The electronic HVAC uses all servo motors to do the same. Pull the head unit and see what is connected in the back. If it is vacuum lines + electrical connectors, it is not an easy swap. If it is all electrical connectors, then maybe.........
