Can't say I've done it, but I lay awake at night thinking about it. Strokerkits.com has about 4 stroker kits for the 351W ranging from 373 to 428 cubes. PAW has a 428 short or long block. I am kinda leery of the reliability of getting 428 cubes out of a 351, but imagine that coupled with a mild roller cam. 500hp easy and all under 5,000rpm.

I've also done a ton of research on this motor, I can probably help you out but I have a few questions. First, exactly which stroker kit are you looking at (377, 392, 408, 427?). What heads are you running? What kind of cam do you want (hyd. flat tappet, solid flat tappet, hyd. roller?). Let me know and I'll try to help you out.
As for induction, how about the tallest BLOWER you can find, and 2 Holley 1050cfm Street Demons?? Or for a smaller budget, how about the tallest tunnel ram manifold you can find with the above carbs? Or maybe add a computer and tuned-port injection...?

OK, I did a little research and found a couple of cams. I stayed mild on the duration so you'd have plenty of low end torque, even with the extra displacement. A couple things to consider, if you had exhaust side work done the heads you could run a single pattern cam, there are a lot more choices and I saw a few out there that were good. Also, I don't know your budget but a step up to a hyd. roller setup would give you a ton more power without having to go to a radical cam. Anyway, here are the picks I'd go with:
Milder of the two
Crane HMV-272-2 #443942 216/228duration .484/.512lift definitely a stump puller in that motor
Comp XE-268H #31-242-3 224/230dur .509/.512
A step up cam that may require a bit lower gearing or stall converter to be happy, but still plenty of low end
