I had the same problem with and without weatherstrip. You just have to mess with it (adjusting up/down/back/forward) until it works. I have found that some preload against the striker (like from weatherstrip) seems to help.
I went thru two "new" latches from mid-fifty a while back. I ended up putting the "old" stock latch on and it works great!
First latch from mid-fifty popped open when I hit a bump in the road.
Second latch from mid-fifty got so stiff the star wheel wouldn,t turn.(maybe my fault) because I was closing it vigorously trying to brake in new wx/stripping, and might have damaged it.
