the later model 351's (mid to late 87+) had e7 heads, or the exact same head that the 5.0 mustangs had. Not sure what year you're running, but it could be the same head.
i have '65 289 (4V) heads on a w build in my '83 bronco....ported etc with larger valves...works very well but going to a bigger cam to better help better offset the additional compression and get the performance they can deliver.
If you have smog heads the 302/289 are a big bonus- have to drill them out to the W head bolt size and a pre '72 or so head will increase compression by at least half a point...get the right pistons and you will have great quench to boot.
learn how to measure and use compression and you will be fine...even better.
