Can you..

I got a whole bunch of dirty muddy water up under my hood! Can I hose that down? Or will it do damage to my engine?

If it is a V6 like in your user name, then it should be ok. You might want to cover the coil pack and alternator before washing. The V8's have a problem when water gets into the spark plug pockets on thop of the engine and shorting out the ignition.

Yes, that will be fine. I would spray down the engine bay with a good degreaser first, and then wipe it down.

You can always try compressed air as well if you have a compressor and the proper equipment.
