How much of a miracle worker is a chip? Say I want to take my stock '89 F-250 460 w/ Speed Density EFI (I think that's what it is) and C6 trannie, and add headers, new intake manifold, possible head work, and biggest of all, a 514 Stroker crank. Can all the ensuing computer problems be solved with a new chip, or must I convert to Mass Air or carburetion?

Superchips has been programming custom chips for a LONG time so they can handle it. The biggest factor in providing a good chip is how much detail you can provide. The more the better.
The best thing is to build the truck and drive it enough to get a good idea of driveability problems with the stock computer (keep a log) and then fill out the custom sheet. The custom sheet lets you give a lot of detail concerning your setup/modifications, how it currently drives, if its too lean, too rich, etc. The better the info you give the better the result.
With all that said, I would still recommend mass air. It takes better to modifications and there's less chance it'll take more than one attempt to get it right. Considering all the modifications your doing, mass air is a drop in the bucket. :-)
