What, technically, does a chip do to improve the performance of an engine? It can't just be changing the shift points, but is it in the air/fuel mixture?

Based on throttle position and RPM, it advances the timing 3-8 degrees. Plus it leans out the fuel mixture by an average of 2%, depending on the point in the fuel curve.
Here we go. I'm going to really sound stupid now, but do you have ignition timing as such on a diesel? I was under the impression that the mixture detonates when it reaches a certain pressure/temperature.

are we talking diesel or gas here??
Diesel need more fuel for more power
the chip adds fuel, advances injection timing, changes injecter duration, controls boost, and a few other things.
you can also modify shift points, tourque converter lock up point,, amount of pedal before down shifts, raise line pressure in the trans'

Ditto the above. I wasn't paying attention to the signature and assumed it was a gas engine you were inquirying about....
Here's what chip does for a Powerstroke:
Changes the injector control pressure.
Changes the injector pulse width.
Changes the boost map (more aggressive curve).
Changes the torque map (more agreesive curve).
Increases the line pressure curve in the transmission, resulting in a progressively firmer shift.
Changes the shift points. This is controlled by mph at partial throttle and by rpm at wide open throttle.
Reduces the shift delay.
Adjusts the torque convertor lockup parameters.
With the injectory control pressure and pulse width, the curve is also changed to reduce or remove the flat spot.
