With the 351 finely tuned, and a light throttle foot (this is the big one!!), it will get pretty decent mileage. Swapping will likely end up costing more than you save in the long run.

When I got my truck, I was kind of discusted that it had a 300. I thought I would swap it for a v8, but after 6 1/2 years of driving it, I love it. The PO did a bunch of performance mods to it, so I can't say how a stock one would be, but I get about 13-14 mpg with the motorcraft 2bbl carb and 4.10s with 36s. I am pretty happy with that
If you want to look at it from an effieciency standpoint, you might want to consider the savings in projected mpg vs. cost of putting it in. Be sure and keep in mind how many miles you would need to put on it for the install to pay for itself. However, for strictly entertainment purposes (hobby) you're welcome to do absolutely whatever you please. I will say that I've always liked my 77 F-150 with the 300, but I haven't driven anything else except my 2000 ford focus (I do drive it for the mpg) The most important thing though is that you be happy with it when you're done.
The only reason against swapping (if thats what you want) is the ever abominable Exhaust manifold cracking.
I had to pay $400 to replace my last one (1993) and when I sold that truck I said to myself "no more of that" and went to V-8's with EFI.
I still have my 77, with it's 460 (bad Berings) and wish on every star at night for a 300 to replace this 460.
I had great luck with those 300's with the exception of those Exhaust manifolds.
I dont know where you'd ever find another Exhaust Manifold these days.
