I did mine back in the early 90's using matching vinyl. I used some 1/2" foam to help pad it more then glued/stretched the new vinyl over it. Turned out pretty nice overall. The hard part is getting the outer corners to blend all together right since it's a compound corner. I then screwed the defrost ducts over top and it helped pull the vinyl down tight. This was 17 yrs ago and it still looks nice, and I did the door panels in the same material so it matches.

I was thinking of the door panels too, what kind of glue do you recomend. I used some spray adhesive for the headliner in my '80 stepside, it turned out nice, but felt stretches a lot easier and doesn't have to be as tight as the vinyl will.
