Is it a must to always to tow out of overdrive I can understand it on up down hilly roads ,but what about open highway I am towing a 35' fifth wheel with a '95 crew cab dually PSD diamond eye turbo back exhaust and DIY intake

IMO the only time you need to turn the OD off is:
1. The tranny is hunting for gears too often. Locking and unlocking the TC.
2. Constant speeds below ~40-45 MPH. Lugging the engine ect.
EGT and/or tranny temp gages are the best insurance you can have for towing/hauling. You probably don't have too much to worry about though due to your intake and exhaust mods. They really help keep the temps down.
Another trans cooler will help too...if you have an automatic of course.
If you're able to drive in such a way that the tranny shifts up into overdrive and stays there as you cruise then use overdrive. If driving conditions are any more difficult than that and your tranny downshifts out of overdrive more than once in say, 15-20 minutes, then lock out the overdrive and use it as a three-speed. If you're towing you should definitely have a nice BIG tranny fluid cooler. Keep it cool and clean and it can last a good, long time. Change the filter and all the fluid every 20K if you tow a lot.
