There's a whole lot of empty real estate, between my bench seat and the bottom of the dash (the tranny "hump" area, if you will). Any cool consoles around that look good there? I can only seem to find ones that go where the factory one already is, up at/on seat height.

If you find something, let us know! Although I've got a center console, I too keep looking on the center floorboard at that large flat piece of real estate, thinking "man, that's a lot of wasted space."
About the only thing I can find to make use of that space is the "center hump" mats / liners by Catch-All, Highland, etc. Not perfect, but at least it does give you a few shallow trays to hold a cellphone, coins, etc.
That "wasted space" is a good place to stretch your legs when the cruise is on during a long haul. That is one of my favorite things about the Lariat. All of the other trucks (Chevy and Dodge) have a console there and for long legged guys like myself, it is uncomfortable to have your legs sandwiched in that small space. Just my $.02 worth.
Ya beat me to it Madjak! I tend to put my size 12's up there (well, at least the right one) while cruising (literally, with the cruise control on). And since I have the center console as well, I have all I need. I think I'll keep my wasted space. However, I did see some nice consoles, I just can't remember where I was when I saw them. If I run across 'em again, I'll post the site.
