I don't know if you mis-typed 6.0 or 7.3. Check in those forums for mileage posts. My 6.0 gets 14-16 city, don't know highway as it rarely gets driven there.
If you start out on the top of a mountain pass and coast all the way down you might get 20 mpg I would say if you just do highway you are gonna see anywhere from 14 to 18 mpg and thats what the overhead console will show so you can deduct about 1 mpg off of those numbers.

I have yet to see that much of a differency between hand calc and truck calc. According when I have done it it was off maybe .2 -.4 less, which I don't think is really all that bad considering how the computer goes about calculating it all.
You have to understand that there are variable's and no two 7.3L's are exactly the same....same goes for the quality of fuel in your area compared to my area also you probly dont let your truck Idle as long as I do, IMO the more the truck Idle's the more that MPG comp is gonna be off your actual milage and so far thats all my truck has been doing this winter. After all according to my trip computer in My 2005 Mustang GT showed 35 MPG on a 1300 mile road trip through Rocky mountain country, considering that before that trip I had never seen the computer show anything over 19 mpg heh not bad for a Mustang V8.

My numbers are close to Layson's city driving...i dont usually go outa town so i never really make highway calculations. Im leaving this weekend for Fort Wayne, Indiana, I went during this past summer from Lake Geneva Wisconsin---->Fort Wayne Iniana with half a tank (29gal tank). Thats without the chip, and exhaust and during summer temps she burns better so...i guess ill see what i get when i get there.

I just did a 1250 mile trip last week. The first outbound leg was in snow and wet and got right at 15 driving 55-65. Coming back the roads were dry and with cruise set at 70, I got 17.3.
