well we are back from the hunt, we now have 3 ELK hanging in our meat locker. looking mighty tasty, of course the night I killed my Bull we had grilled back straps for dinner to keep up with tradition. also having Thanksgiving at Elk camp is just way too cool.
keeping it short as we are still unpacking and cleaning up.

Congrats on a good hunt. Hunting is one of my favorite pastimes. Getting together with friends & family for a hunt is great. Plus you get a freezer full of meat too.

1st elk was a bull about 450 lbs hot hanging weight
2nd elk was a Cow about 425 hot hanging weight
3rd was a calf about 200 hot hanging ( this one was a mercy kill as someone had shot it's right front leg off with the exception of a small piece of skin. so she was shot to keep the coyotes and wolfs from killing her.)

Both the bull and cow hunts were general rifle, which is kind of bad as it is the 6th and 7th week of the hunt season and everything is a little skittish.
all three were killed with my Remington model 700 30-06 with Remington 180grain core lock ammo.
Hmmm, are you offering to share? I never cared much for venison but I like moose, and somehow I think I'd like elk. How does the flavor compare to either of the ones I mentioned?
a little stronger and leaner than moose, much less game taste than deer, at least the deer in Arizona.

That's what I was after...it's that gamey taste I never cared much for. I've heard about all sorts of recipes to reduce or eliminate it, (such as soaking the meat in milk before cooking) but I never had any prepared that way.
When I was a kid I spent a year in Sweden and we ate Bullwinkle all winter...I loved it, and it sounds like I would like elk as well. Also had bear and mountain lion, liked the cat better.
Sounds like I might to go elk hunting if I can ever find the time...
